Harvest Cookies!

We really love baking cookies around here…especially when the weather begins to turn cooler. We tried this recipe last fall and, after a few changes, it has become one of our favorite cookies of the season! With several flavors going on in each bite, we think you will enjoy them as well!

Harvest Cookies

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon orange extract (if you don’t care for the orange flavor, you may substitute with 1 teaspoon vanilla extract)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 3 cups rolled oats
  • 1 cup Kraft caramel bits
  • 1 cup dried cranberries, chopped

Using paddle attachment, mix butter and sugars with a stand mixer. Add eggs and extract.

In a separate bowl, combine flour, baking powder, baking soda, salt, pumpkin pie spice and oats. Add dry ingredients to butter/sugar mixture. Mix until dry ingredients are incorporated.

Stir in caramel bits and cranberries until evenly distributed.

Spoon generous amounts of dough on cookie sheets lined with parchment paper. (We get about 40 cookies from this recipe.)

Bake at 400 degrees for 9 – 11 minutes or until golden brown. Let rest on pan for a couple minutes then transfer to cooling racks to cool completely.
