Skillet Cornbread

Hey there…Anna here! This cornbread recipe has become an absolute family favorite so I thought I would share it here on the blog. We found the original recipe online and tweaked it to our liking.

First of all, here are the ingredients:

1 cup all-purpose flour
1 cup plain yellow cornmeal (NOT cornmeal mix)
1/3 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg, lightly whisked
1 1/3 cups buttermilk (whole or 2% milk can be substituted)
1/4 cup butter

Put the cast iron skillet in oven (mine is 10 1/4 in.), then set oven temperature to 425 degrees.

Meanwhile, in a large bowl combine flour, cornmeal, sugar, baking powder, baking soda, and salt.

In a small bowl, lightly whisk egg.

Stir in buttermilk.

Add egg and buttermilk to dry ingredients. Stir just until moistened.

Remove hot skillet from oven and add butter to coat bottom and sides of skillet.

Pour batter in skillet and bake for 20 minutes or until brown on top.

Enjoy a piece hot from the oven, slathered in butter! Mmmmmm!
