This & That

After spending 8 days in WV, the girls and I arrived back in NC last Tuesday afternoon. By the time we went to bed that evening, we had been up for about 40 hours – probably not good driving conditions. I’m very thankful for the Lord’s protection on us. Spending many hours at the hospital literally drained us but we didn’t realize just how much until we were back home. It took several days for us to feel “normal” again – the Lord truly carried us through that time and we are very thankful to Him!

This past Sunday (just after midnight Saturday night), we got the news that our 3rd GRANDdaughter and 12th GRANDblessing had made her arrival! Oh, how very thankful we are for her safe delivery! Mommy and baby are doing well and, Lord willing, we look forward to seeing our newest GRAND next month at the wedding!

Among many other gifts, Anna received an iron skillet for her graduation, and let me tell you, she has had a ball this week trying new recipes!

Her first-ever iron skillet baking produced a skillet cookie – can you say YUMMMM???

Next, she tried a skillet cornbread to go with that night’s chili supper. Another keeper recipe, for sure!

In order to justify all of these skillet yummies, I’m trying to remind myself that iron-skillet cooking is GOOD for you! Right??? 😉
